Amazing Gluten Free Pizza Crust

- 1 Tbsp gluten free rapid rise yeast
 - 2/3 cup brown rice flour
 - 1/2 cup tapioca flour
 - 2 Tbsp dry milk powder
 - 2 teaspoons xantham gum
 - 1/2 teaspoon salt
 - 1 teaspoon unflavored gelatin powder
 - 1&1/2 teaspoon Italian herb seasoning
 - 2/3 cup warm water (105 degrees)
 - 1/2 teaspoon sugar
 - 1 teaspoon olive oil
 - 1 teaspoon cider vinager
 
- Preheat oven to 425 degrees
 - In a medium mixing bowl blend yeast, flours, dry milk powder, xantham gum, salt, gelatin powder, sugar, and italian herb seasoning on a low speed with regular beaters.
 - Add warm water, olive oil, and cider vinager.
 - Beat on high speed for 3 minutes (if mixer bounces around bowl, the dough is too stiff so add water one teaspoon at a time until it does not resist beaters.) The dough will resemble soft bread dough.
 - Spray pan with gluten free cooking spray. Put mixture in the center of a 12-inch pizza pan or baking sheet.
 - Spray one side of a piece of saran wrap with the cooking spray and use that side to flatten and shape the dough in the pan.
 - Bake the crust for 10 minutes and remove from oven.
 - Cover pizza crust with sauce and desired toppings. Place back in oven for about another 20 minutes or until nicely browned on top.

ReplyDeleteQuestion about the ingredients: in the instructions, you mention sugar twice, but it's only listed once in the ingredients. Typo, or did I miss something? Thanks--because I'm looking forward to trying this!
