First, I need to thank.Lori Lober for this excellent book! So many great recipes! I for sure can't wait to make the gf tortilla wraps!
2.5 tsp yeast
1 3/4 c lukewarm water
2 tbsp sunflower oil
3 1/4 c gf flour
1.5 tsp xanthan gum
2 tbsp cilantro
1/2 tsp crushed red pepper
Salt & pepper
Mix yeast, water, oil & let stand x 20 min
Sift gf flour, xanthan gum, add yeast mixture with cilantro & red pepper. Mix and form sticky dough
Invert onto gf floured surface and knead, divide into 8-10 small balls
Cut out 8in circle parchment paper, roll out each ball under it (the thinner the better)
Place a nonstick skillet in medium heat, add tortillas one at a time with parchment underneath & cook 2-3 minutes. Flip, repeat
Serve hot or cold with favorite fillings.

Oh my goodness! More.yummy goodness!

Protein Bars, I can hardly wait!
1 stick organic butter
2 tbsp organic Brown sugar
2 tablespoons agave nectar or honey
2 beaten eggs,
2.5 c millet flakes
1/2 c raisins
1/3 c quinoa
1/2 c golden raisins
2 tbsp pumpkin seeds
2.5 tbsp sesame seeds
3 tbsp chopped walnuts
1/2 c dry coconut
Preheat oven to 350
Grease 10x7 pan
Beat together sugar, butter, syrup until creamy
Add all.remaining ingredients & stir till combined
Place batter.in pan & flatten with spatula
Bake for 30-35 minutes, until golden Brown
When cool, invert onto flat surface & cut into 12 bars.
Store in airtight container x one week
